Last week, our registered dietitian, Denise Cykiert, surprised our patients and visitors with hearty stacks of homemade Apple Cinnamon-Buttermilk Pancakes made with Ensure. It was part of a cooking demonstration to help our cancer patients prepare foods that will
help them maintain their health and weight while undergoing cancer treatment. Here’s the recipe Denise used:
Mix:
- 2.5 cups of Betty Crocker Buttermilk Pancake Mix
- 4 eggs
- 2 teaspoons of vanilla extract
- 4 packets of Beneprotein
- 1 can of vanilla Ensure Plus
- 4 tablespoons of butter
Topping:
- 1 cup whipped cream topping
- 2.5 cups of applesauce
- Pinch of cinnamon – sugar (optional)
Combine pancake mix, eggs, vanilla, Beneprotein, Ensure Plus, and melted butter in a bowl. Stir until batter is smooth and has thickened to a pancake batter consistency. Butter a hot skillet and place about ¼ cup of batter onto the skillet to make a pancake four inches in diameter. Cook pancakes until they are light golden brown on each side and the middle of the pancakes are fluffy. To make topping, mix whipped topping and applesauce into a bowl and place on top of pancakes.
Makes 20 pancakes
Serving size 1, 4 inch pancake
Total Calories 167 and 5 g protein and 6 g fat per serving
