Wellness Minute: Summer Healthy Eating Tips
What are some healthy things I can grill this summer?
- Consider fish and grilled veggies
- Be careful of the portion size and watch the fat!
Healthy Summer Recipes recommended by the Botsford Dietitians:
Barbequed Chicken and Vegetable Kabob
Marinate 1 (4 oz) boneless chicken breast in low cal herb vinaigrette dressing, thread chicken on skewer with 4 mushrooms, 4 pineapple chunks, and 4 chunks of green pepper. Grill to Taste.
Chicken and Spinach Salad
Ingredients: 6 oz spinach, fresh, 2 oranges peeled and cut into chunks, 2 cups cooked and cubed chicken, 2 cups strawberries
Dressing: 3 Tbsp red wine vinegar, 3 Tbsp orange juice, 1 ½ Tbsp canola oil, ¼ tsp dry mustard, and ½ tsp poppy seeds
Mix dressing ingredients and refrigerate, Wash spinach and tear into bite-size pieces. Add oranges and strawberries. Serve with dressing.
Herb Potato Salad
Ingredients: 1 lb potatoes (about 4 cups-regular or new potatoes), ½ cup radishes (optional)
Dressing: 3 Tbsp Nonfat plain yogurt, 1 Tbsp reduced calorie mayonnaise, 1 ½ tsp Dijon mustard, ½ tsp chopped garlic, ½ tsp dried basil, ½ tsp dried thyme, ¼ tsp onion powder, ½ tsp salt (optional)
Scrub potatoes and cube. Place in a medium saucepan and cover with water. Bring to a boil. Cover, reduce heat and simmer 12 minutes or until potatoes are done. Drain. Mix dressing ingredients. Combine hot potatoes, dressing and radishes. Serve hot or cold.
